Page 3 ~ March 27 2013

So again after added picture I can't type....this happens from time to time and drives me up the wall.

So I have divided my dough for my Hot Cross buns, and they are rising until double in size then to bake, here's a picture I took with dough in the bread machine.





Of course now it's working...so I will add more to the post later and add pictures as well, have a great rest of the day.  The sun is out and will soon be over the mountain behind our place....I can't wait it's going to be beautiful with the blue and white....LoVe iT!!

Anyhow on with my Post.

So I was thinking today I'm really missing Hot Cross Buns, maybe this is why I'm not even thinking about Easter.  But did get some Chocolate Bunnies yesterday when in town.  I have already eaten a lot of Robin whopper Eggs....I have had my fill of those.

So on the Topic of Hot Cross Buns, I love them...some are better then others but really missing them today.  The smell of them cooking when working at Thrifty Foods, or just walking into a grocery store in Canada (BC).  I'm not sure if everyone in Canada have them, but forever I can remember eating them at Easter.  Yummy.   So I found a recipe, (I think I have tried to make HCB's before but they have never tasted like bought ones) and they are in the bread machine right now.  Here's the recipe I found on line:

 As I type the beeper on my bread machine goes off....have to run, to do the next step...portion into 12 balls...and get ready for the second rise....then time to bake.  ps I added 1tsp Cinnamon  ~ also I need new yeast so may have to make again...=)

Pull-Apart Hot Cross Buns

"Infused with cardamom spice, these taste as wonderful as they smell. These buns are requested by family and friends every Easter and they are easy to make in your bread machine!"
Ingredients:
1 (.25 ounce) package active dry yeast
1/4 cup water
4 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup white sugar
1 teaspoon ground cardamom
1 1/4 cups lukewarm milk
1/2 cup butter, melted
1 egg
1/4 cup golden raisins (optional)
1/4 cup dried cherries (optional)
1/4 cup dried cranberries (optional)
 
2 1/2 cups confectioners' sugar
1/4 cup milk
1 teaspoon almond extract
Directions:
1. Sprinkle the yeast over the warm water and let stand until dissolved, about 5 minutes. Place the flour, salt, sugar, cardamom, 1 1/4 cups of milk, butter and egg into the bread machine. Pour the yeast mixture on top. Close the lid and set the machine for the Dough setting. If using raisins, dried cherries or dried cranberries, add them at the beep.
2. When the dough has finished, divide into 12 portions and shape into balls. Place them into a greased 9x13 inch baking dish. Cover with plastic wrap and set aside to rise until doubled in size, about 45 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Remove the plastic wrap from the rolls. Bake in the preheated oven until golden brown, 20 to 25 minutes. Make frosting by whisking together the confectioners' sugar, 1/4 cup of milk and almond extract until smooth. When the buns are cool, drizzle frosting over them in a cross shape.

So I can't believe March 2013 is wrapping up...coming to an end, or all that jazz.  The last couple of days, there's been talk about Easter and how Easter and April Fools Day land on the same Sunday.

March 24 2013 ~ Sunday

Happy Sunday to you all, it snowed all day yesterday and then cleared up in the evening, we are having more and more day light hours,  our friend from here posted this on his FB and I'm going to share it wish you all.....
So, how's the extra EIGHT hours of sunlight per day treating ya? SEVEN more to go! April 18th we'll lose pitch dark, May 7th we'll be able to make out shapes all night, and from June 8th to July 4th we'll be able to read a book 24 hours a day.
This is going to be so weird, even now we are eating later and later, it's going to be hard getting to bed for the kids, DD even said I'm going to need better blinds....=)  I'm going to see how tin foil works, the only thing I don't like about that is, you don't get the sun in the day time. 
 We got maybe another inch of snow last night, so about 5-6 inches in a couple of days, and someone said spring was on it's way....=)  I love how the new snow makes the old snow, look pretty about and the snow we got make it hang on the trees which I love....so so pretty.
 DH is getting ready to head out and snow blow the driveway and lake rink, then the kids can go for a skate.

RIP my dear friend, taken from us March 20 2013

Dawn Marie BENNIE

January 29, 1971 - March 20, 2013

It is with much sadness that we announce that Dawn Bennie passed away unexpectedly on March 20, 2013.
Dawn is survived by her mother Lois, sister Sandra (Wade Maybie), brother Darryl, brother Ron (Maureen), two nieces and five nephews. She was predeceased by her father Donald, grandmother Rachel and grandparents Joe and Mabel McClure.
The family wishes to sincerely thank the staff of the ICU at St. Joseph's Hospital for their outstanding care.
A memorial service for family and friends will be held at Piercy's-Mt. Washington Funeral Home on March 28, 2013 at 2pm, with a reception to follow. If desired, donations may be made to the SPCA in Dawn's memory.

March 18 2013 ~ already....days are flying by

Hi Everyone, I can't believe I haven't posted since March 10th.  So the kids had spring break last week, our truck broke down, we got new car, DD had her State Tournament for Hockey, and now it's all finished for the year, we saw a beautiful Northern Lights show two nights ago, kids skating on the rink.

And now it's Monday a new week, it's been beautiful day today and actually the last few days with sunny blue skies.  We are getting more and more day light, last light alone it was still twilight at 9pm.  Looking at the Aurora web site we may have another show tonight, we will see.

March 10 2013 ~ Happy Birthday to my Dad!!

Hi Everyone, just wanted to wish Happy Birthday to my Dad!!  Wish we could be there for your dinner. 

Yesterday we went for a Dog Sledding adventure, another thing to mark off our bucket list.
We had lots of fun...can't wait to go again next year....=)

Kids are off this week, and DH....so we will be having some family time.  Have a great day....Did you remember to put your clock forward?  Bye for now

March 8 2013 ~ Friday again and no school for the kids

Hi everyone it's another Friday in Alaska, the kids had a day off before all week off for spring break.  Another busy weekend coming up, with visiting a Dog sled facility and riding on the sled, then hockey for DD the last one before her teams State Tournament the following weekend.

My Camera memory card is cleared and ready for taking pictures tomorrow, fingers crossed for a beautiful day.

We have been watching the Iditarod on the news and checking out the lastest race standings at the link below.  They are just at or past the half way point.  A way warmer race them normal, with the mushers and dogs having to go through melted streams.

March 4 2013

Another day has gone by here in Alaska, we had a busy weekend...when don't we.  But this weekend was the Start of the "Last Great Race" the 41st Iditarod Race.  We went down town to help with the other Canadian's my husband works with.....So much fun I'm addicted now, and will be doing more volunteering next year....it was great.

It's been warm here the last few days, snow melting every where.  So glad they had enough snow for the start of the Ceremonial Start down town.  Didn't make it to Willow this year for the Restart but will hopefully make it up that way next year.  I may enough rent a really big camera lens to take some great shots. 

We just have until the 15th weekend of March then DD's hockey will be over, then we can start checking off things on our Bucket List....the Iditarod wasn't on my list but I can for sure check it off my list....=)

OMG March 1st 2013 already

Hi everybody, we are finished with February, and now moving into March. We had a bit of snow today, not adding up to anything.  On Saturday is the Ceremonial start for the Iditarod  Race

On Wednesday Carlisle and I went to the Canadian Musher Reception, meeting two of the three Canadian's racing.  There was a great turn out.
These are the two Canadian Mushers, the tall one is Gerry Willomitzer #21 and Aaron #58-
Michelle Phillips #7 didn't make it to the party.
