April 13 2014 ~ Hot Cross Buns

This recipe is from SparksPeople.com~ I'm trying this in my bread machine, hoping the egg and buttermilk make it through the warming part.  I will post when we have tried these. 

Also these are the fruit I  added 1/3 cup of raisins, 1/3 cup dried cherries and 1/3 cup fruit cake mix 
Bread machine order I used as well: Water, buttermilk, sugar, 1 egg (egg substitute 1/4 cup), flour, brown sugar then spices (didn't add nutmeg, added a bit of cloves instead), and yeast.  Will wait and add the fruit when the beeper going off to add in the bread machine.  Hope this turns out....stay tuned.

Hot Cross Buns

Introduction

Every Easter these spicy, fruit-studded rolls crop up in various incarnations. Some say they actually have pagan roots in Spring Equinox rituals, and that the monks simply added the cross to convert people to Christians!
Number of Servings: 12

Ingredients

    2 1/4 tsp dry yeast
    1 tbsp sugar
    1/2 cup lukewarm water
    2/3 cup warm buttermilk
    3 cups flour
    1 cup spelt flour
    2 tsp ground cinnamon
    1 tsp ground ginger
    1/4 tsp nutmeg
    1/2 tsp salt
    1/4 cup butter, melted
    6 tbsp brown sugar
    1 egg
    1/3 cup raisins
    1/3 cup dried cranberries
    1/3 cup candied orange peel

    ---Paste for crosses---
    3 Tbsp. flour
    2 Tbsp. water

Tips

This is my version, a fluffy and not-too sweet type with a flour-paste cross.

Directions

Place the yeast, sugar and water in a bowl.
Let it sit 5 minutes, until foamy.
Stir in buttermilk.
In another bowl, whisk together flours with the spices and salt.
Add 2/3 of the flour mixture to the yeast, stirring well.
Mix in the butter, brown sugar, egg and dried fruit and peel.
Add remaining dry mixture and mix until you have a sticky (but workable) dough.
Knead for about 5 minutes on a floured surface, until smooth and elastic.
Place in an oiled bowl, cover and let rise for 1-1 1/2 hours, until doubled.
Punch down and divide into 12 balls, placing them in a 9x13 baking dish, spacing close together.
Cover and let rise a further hour.
Preheat the oven to 350F.
Mix the flour and water for the crosses, put the mixture in a zip-lock bag and snip a tiny piece off the corner.
Pipe a cross onto the top of each bun.
Bake 25-30 minutes, until golden.

As another week passes it's hard to believe Easter will be here next weekend, here in Alaska we do not get Good Friday or Easter Monday off, so it's just a regular weekend.  Planning on cooking a ham, but nothing that special.

So what happened this week, let me see, seemed busy and to whiz by...Monday it snowed, my friends and I planned to hike the Switchback, it's a steep road the we love to do...=)  but didn't because of the snow....=(  So I cleaned our place and my vacuum died, RIP Kenmore after 18 yrs.
  Tuesday I went to work out at my friends, or was that Wednesday....Then Tuesday after DS finished school I picked him up, and took him in to get his eye checked again because contact lens prescriptions only last a year here. Which is a pain in the you know what.  Then after that we tried to get DS his learners permit, but because he doesn't have a Social and the letter we had was a few years old, it didn't happen, more time to study....you would think.
Wednesday Im not sure what I did in the day, but DS had his hockey party at 6pm at the school.  Seems so long ago that he was playing Hockey.
Thursday I went to the doctor for a check up, then went and did the Switchback with a couple friends, then later went over to my friends to help dye her hair.
Friday 9am and I was at my favorite church Garage Sale, along with have the senior community....I van pulled up.  So I found a Vacuum, (Shark Navigator) clothes, cooling rack, back pack for my over night hike this summer, and a few other things, all for $26  .... jackpot.

So I started back on Sparkpeople, the hardest part of losing weight....not to eat like the world is coming to an end .... everyday..... sigh!!  Love that it makes me accountable for the food I eat...well at least keeps me on track, and it seem to be working.  I'm doing the exercise part, just have to get the eating part under control.  Well stay tuned in the department.

Just got back from a hike, DH and I went to do Rendezvous Peak http://alaskahikesearch.com/hikes/rendezvous-peak/  but it was so windy and cold we decided it was way to cold.  We ended up going to a hike closer to our place.  Which had a lot more hills then I remember....but was a great workout, will be hiking this one again.  We also found a Geo Cache, so that was good.

Oh ya last night I made Doniars, and they are really good, I had a recipe before but this are way better, here's the recipe if you want.

My Donairs & Donair Sauce
Makes 3 lbs of meat and enough sauce for that much… how many it’ll feed depends on how long since it’s been since they had their last donair…
  • 3 to 3.5 pounds lean ground beef
  • 2 tsp flour (all-purpose or whole wheat)
  • 2 tsp dried oregano
  • 1.5 tsp cayenne pepper
  • 4 tsp paprika (not smoked)
  • 2 tsp onion powder
  • 4 tsp garlic powder
  • 1.5 tsp black pepper
  • 1 tsp salt
For the sauce:
  • 1 can (300ml) sweetened condensed milk (not evaporated milk)
  • 1/3 cup white vinegar
  • 1 tsp garlic powder
Pita bread, diced tomatoes, diced onion and shredded mozzarella (optional) for putting the donairs together… and lots of napkins.
To make the meat, mix all ingredients together in a food processor.  Process until it comes together into a ball, and then a bit more.  You might have to do this in two batches, depending on the size of your processor.  You can do this by hand too, and is great if you are stressed out… grind and grind and grind the meat, throwing it down on the counter… basically beating the crap out of it.  Form into a log shape and put on a cooling rack on a foil-covered baking pan.  Bake at 325 degrees for 2 hours.  Allow to cool completely, and preferably refrigerate before slicing.
For the sauce, mix the three ingredients together, don’t worry, it will come together.  Once it does, it will never separate… another benefit of this recipe.  It is also very thick and will thicken up even more once refrigerated.
To assemble a donair, warm a pita bread by slightly dampening it’s surface with water and laying it in a hot frying pan… letting it go about 30 seconds on each side.  Thinly slice donair meat and quickly fry it in the same hot pan, either to simply heat or to crisp it… a personal preference.  Lay the cooked meat on the softened pita, top with a generous spoon of sauce, diced tomatoes and onions.  Roll it up if you can, or wrap it in foil to keep it together.
Donair meat & sauce also make delicious pizza toppings… add the onions and tomatoes when it comes out of the oven and serve with extra sauce for dipping.
Like most of life’s best offerings, you might feel like you need a shower after a feed of good donairs ;)

Everyone in my house loved these and kept coming back for more...my sparkpeople food tracker did not how ever....=)  I couldn't have anything for the rest of the day.
 
So DD lost both not one pair but both of her eye glasses....grrr we went through her whole room and purged out a lot of things, and delivered to new owners and still haven't found either pair.  So I guess I will be check out the school locker and lost and found at school.....grrrr.

Well that's all I have to chat about today....sorry I just sit and type, don't really edit or think about what I'm typing....kind of like a diary so to speak.

Good Morning theres a light snow happening today, also yesterday it snowed.  Looking back at last years pictures it snow pretty much the same last year, but we got more snow.

April 7 2014 Snow
We had a death in the family after 18yrs of cleaning floors and carpets...our Kenmore 6920 was laid to rest.....I'm going to miss you....=)  Now to look for a new vacuum....I made a poll on FB and got a lot of input into the one I should get.  I will keep you posted on the one I do end up getting....=)
New baby born to my DH side of the family....=) he's so cute  Congrats to you both.


So it seems like we have been busy, enjoying our time here.  Kids only have 7 weeks of school let, I can't believe it.

My CAN girlfriends and I were going to do the Switch back Hill, but with the snow, are putting off for another day.  Maybe Thursday afternoon if Mother Nature cooperates.

This week DS has his hockey wind up party at school it's a pot luck, so that will be fun for him.

I'm getting excited about next week and the start of my photography class...it's one evening a week for a month so I'm hoping to learn a lot and hopefully tweak my skills.  I just hope I can remember all the info....=)

Well I'm off to make Chocolate Orange Banana Bread:

Chocolate Orange Banana Bread

1 cup sugar
1/2 cup vegetable oil
2 eggs
3 ripe bananas, mashed
juice and zest of 1 orange
1 3/4 cups flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup of each white chocolate chips and semi-sweet chips

Preheat oven to 325 degrees, prepare large loaf pan with non-stick cooking spray.
Combine sugar and oil in your mixer, add in eggs, bananas and orange zest, mix.
Sift together all of your dry ingredients.
Alternate dry ingredients and orange juice into sugar/banana mixture.
Mix well, scraping the sides of the bowl.
Fold in chips.

Pour into pan and bake for 1 hour, or until toothpick inserted in center comes out clean.

Grab a glass of milk...or your favorite cuppa...and partake in the goodness!!
It looks so yummy, I will let you know how it turns out....=)
