Congrats to Kale and Carolyn on the birth of their new baby girl today.....Kale is DH nephew and they live in Ont....the clan gets bigger...one baby at a time...=)  Can't wait to see pictures.

On the home front, it's not to bad of a day, had to get groceries....searched the whole Carrs/Safeway store looking for canning jars....found everything else on my shopping list and then some...so had to ask....the guy takes me to the very front of the store....and there they are on display....So I picked up ingredients to make Red Pepper Jelly...kind of had a craving for it....Yummy cracker, cream cheese and Red Pepper Jelly...so so good.

I just looked at my Notes on FB....more like Recipes...and Red Pepper Jelly isn't on it...so let me get my recipe book and I will type it out....... So this is out of Company's Coming Preserves  page 47

(Hot) Red Pepper Jelly
This makes a greenish-colored jelly.  Use red peppers to make a orange-red color.  Great over a bar of cream cheese served with crackers.

1 1/2 cups    seeded, chopped green or red peppers  350ml
1/4 cup        chopped canned jalapeno peppers         60 ml
1 1/2 cups    white vinegar                                         350 ml

6 1/2 cups    granulated sugar                                     1.5 L

6 oz.             liquid pectin                                            170 ml

Green or red food coloring (optional) I don't put in.

Combine chopped peppers and vinegar in blender.  Blend smooth.  Pour into large pot.

Add sugar.  Heat on Medium-high and stir until sugar dissolves.  Bring to a boil.  Boil for 3 minutes.

Stir in Pectin.  Return to a full rolling boil on high.  Boil hard for 1 minute.  Remove from heat.  Skim off foam.

Add a bit of food coloring if desired to make a stronger green/red.  Pour into hot sterilized jars to
within 1/4 inch (6 mm) of  top.  Seal.  Makes 6 half pints.


I have made this for a few years, I use the smaller jars and give as gifts...=)
